Well I gotta say that my favorite food is Sichuan, but thats because I love spicy food. However Shaanxi has some great food too. Some of the snacks here are fantastic.
Rou Jia Mou / Xi'an Hamburger - is a baked flatbread, sliced open and stuffed with boiled meat, usually pork. Ask for no fat and it is quite tasty, but a little dry. If you get it normal, with some fat pushed in, it provides the perfect amount of moisture to combat the dry flatbread.
Liang Pian / Cold Noodle - Just as it sounds, they are cold glass noddles with a rather spicy sauce drizzled over them. A staple snack food for most locals.
Huo Guo / Hot Pot - Probably one of my favorite meals. Xi'an is great because it has all different kinds of hot pot. The biggest number though would be West China hot pot (or Sichuan hot pot), which is quite spicy.
Beyond that all the Muslim food that can be found in Xi'an is a real treat. It is authentic, because of a large Muslim population, and unique it a lot of the flavoring.
Come to Xi'an and taste the cuisine, you will not be disappointed.
